Fresh, Sweet, & delightful! In 15 minutes!
Ingredients
1 package Tinkyada Organic Brown Rice Pasta Elbow
1 cup strawberries, diced
1 cup blueberries
2 peaches, diced
1/2 cup bocconcini, diced
2 cups spring mix salad
1 tbsp fresh basil, chopped
For the dressing
1 1/2 tbsp apple cider vinegar
2 tbsp pesto sauce (Store bought or homemade)
2 tsp honey
1/2 tsp salt
1/2 tsp pepper
Instructions
Bring a large pot of water to a boil and cook Tinkyada Organic Brown rice pasta Elbow according to package directions, rinse with cold water, drain well and then set aside.
In a large bowl, whisk to combine the apple cider vinegar, pesto sauce, honey, salt and pepper. Pour in the pasta, strawberries, blueberries, peach, bocconcini, spring mix, and, fresh basil, toss to coat. Cover and chill for 1 hours before serving to allow flavors to develop.
